Changing the name of a OneNote document is easy - but deceptive!
The OneNote Class Notebook file, when created through Office 365, lives in a folder in OneDrive called "Class Notebooks". Renaming the file there breaks the link between OneNote and the file so you must open the new file from OneNote.
